Ingredients

  • 12 oz cheese tortellini
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 5 cups fresh baby spinach
  • 4 oz goat cheese
  • 1 cup milk or cream
  • 1 cup grated Parmesan cheese
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 tsp red pepper flakes (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the cheese tortellini and cook according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the tortellini and set aside.

Step 2

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1–2 minutes, or until fragrant.

Add the baby spinach to the skillet and cook for 2–3 minutes, stirring occasionally, until just wilted.
