Ingredients

  • 16 oz cheese tortellini
  • 2 tbsp olive oil
  • 3 units garlic cloves

  • 14 oz canned diced tomatoes
  • 15 oz cannellini beans
  • 4 cups fresh spinach
  • 0.5 cup parmesan cheese
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp fresh parsley (optional for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the cheese tortellini according to the package instructions. Once cooked, drain and set aside.

While the tortellini is cooking, heat the olive oil in a large skillet over medium heat.

Mince the garlic cloves and add them to the skillet along with the crushed red pepper flakes. Cook for about 1 minute, stirring frequently, until the garlic is fragrant.
