Ingredients

  • 4 Large ripe tomatoes
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder
  • 1 cup Mozzarella cheese (shredded)
  • 0.25 cup Parmesan cheese (grated)
  • 0.5 cup Breadcrumbs
  • 6 leaves Fresh basil leaves

Directions

Step 1

Preheat your grill to medium heat (around 375°F/190°C). If using an oven, set it to broil.

Step 2

Wash the tomatoes thoroughly and slice each one horizontally into thick rounds, about 1/2-inch thick. You should get 2-3 slices per tomato, depending on its size.

Step 3

Brush both sides of the tomato slices with olive oil, then sprinkle them evenly with salt, black pepper, and garlic powder.

Step 4

In a small bowl, mix together the shredded mozzarella cheese, grated Parmesan cheese, and breadcrumbs.

Step 5

Lightly oil the grill grates or line them with foil to prevent sticking.

Step 6

Place the tomato slices on the grill and cook for 2-3 minutes per side until they start to soften and get light grill marks.

Step 7

Carefully spoon the cheese and breadcrumb mixture onto each slice, spreading it evenly to cover the tops.

Step 8

Close the grill lid and cook for an additional 2-4 minutes, or until the cheese is melted and bubbling. If using an oven, place the tomatoes on a baking sheet and broil for about 2-4 minutes.

Step 9

Remove the tomatoes from the grill or oven and let them cool for 1-2 minutes.

Step 10

Garnish each slice with a fresh basil leaf and serve warm. Enjoy!
