Ingredients

  • 4 pieces Chicken breasts
  • 1 cup Mozzarella cheese
  • 1 cup Cream cheese
  • 2 cloves Garlic (minced)
  • 1 teaspoon Italian seasoning
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 16 pieces Shrimp (peeled and deveined)
  • 2 tablespoons Olive oil
  • 2 tablespoons Butter
  • 1 tablespoon Parsley (chopped)
  • 0.5 teaspoon Paprika
  • 1 tablespoon Lemon juice
  • 8 Toothpicks

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Slice each chicken breast horizontally to create a pocket, being careful not to cut all the way through.

Step 3

In a mixing bowl, combine mozzarella cheese, cream cheese, minced garlic, Italian seasoning, salt, and black pepper. Mix until smooth.

Step 4

Stuff the cheese mixture into each chicken breast pocket and secure the edges with toothpicks to keep the filling intact.

Step 5

Season the outside of the stuffed chicken breasts with a sprinkle of salt, pepper, and paprika.

Step 6

Heat 1 tablespoon of olive oil in an oven-safe skillet over medium-high heat. Sear the chicken breasts on each side for 3-4 minutes until golden brown.

Step 7

Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

Step 8

While the chicken is baking, heat 1 tablespoon of butter and the remaining olive oil in another skillet over medium heat.

Step 9

Season the shrimp with a pinch of salt, black pepper, and paprika. Sauté the shrimp in the skillet for 2-3 minutes per side, or until pink and cooked through.

Step 10

Add the remaining butter, lemon juice, and chopped parsley to the shrimp skillet. Toss to coat the shrimp in the buttery sauce.

Step 11

Remove the chicken breasts from the oven, discard the toothpicks, and plate them.

Step 12

Top each chicken breast with 4 shrimp and drizzle some of the buttery shrimp sauce over the top.

Step 13

Garnish with additional chopped parsley if desired, and serve hot.
