Ingredients

  • 225 grams Sharp cheddar cheese, finely grated
  • 115 grams Unsalted butter, softened
  • 200 grams All-purpose flour
  • 0.25 teaspoons Cayenne pepper
  • 0.25 teaspoons Salt
  • 0.5 teaspoons Paprika (optional, for garnish)
  • 1 tablespoon Milk (optional, for adjusting dough consistency)

Directions

Step 1

Preheat your oven to 190°C (375°F) and line two baking sheets with parchment paper.

Step 2

In a large mixing bowl, combine the grated cheddar cheese and softened butter. Mix until smooth and creamy.

Step 3

In a separate bowl, whisk together the flour, cayenne pepper, and salt.

Step 4

Gradually add the dry ingredients to the cheese-and-butter mixture, stirring until a dough forms. If the dough feels too crumbly, add milk, one teaspoon at a time, until it just comes together.

Step 5

Divide the dough in half. For cheese straws, roll one portion of dough into a rectangle about 1/4-inch thick. Use a knife or pastry cutter to cut thin strips, approximately 1 cm wide and 10-12 cm long.

Step 6

For wafers, roll the remaining dough into a sheet about 1/4-inch thick and use a small round cookie cutter (or the rim of a glass) to cut out circles.

Step 7

Place the cheese straws and wafers on the prepared baking sheets, leaving some space between them. Sprinkle paprika lightly over the tops, if desired.

Step 8

Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown and crispy.

Step 9

Remove the cheese straws and wafers from the oven and let them cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.

Step 10

Serve at room temperature as a snack or appetizer. Store leftovers in an airtight container for up to one week.
