Ingredients

  • 1 cup Raw cashews
  • 1 cup Unsweetened almond milk (or other plant-based milk)
  • 0.25 cup Nutritional yeast
  • 2 tablespoons Lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.25 teaspoon Ground turmeric (optional, for color)
  • 0.25 cup Water (if needed for thinning)

Directions

Step 1

Place the raw cashews in a heat-safe bowl and cover them with boiling water. Let them soak for 10 minutes to soften.

Step 2

Drain the soaked cashews and add them to a blender or food processor.

Step 3

Add unsweetened almond milk, nutritional yeast, lemon juice, Dijon mustard, garlic powder, onion powder, paprika, salt, and turmeric (if using) to the blender.

Blend on high speed until the mixture is completely smooth and creamy. This may take 1–3 minutes depending on your blender. If the sauce is too thick, add a little water, 1 tablespoon at a time, until you reach the desired consistency.

Transfer the blended mixture to a small saucepan and cook over medium heat. Stir constantly for 3–5 minutes until the sauce thickens slightly and becomes warm. Adjust the seasoning to taste, adding more salt or lemon juice if needed.
