Ingredients

  • 4 medium-sized Potatoes (waxy variety like Yukon Gold)
  • 150 grams Cheddar cheese (grated)
  • 2 tablespoons Butter
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper (freshly ground)
  • 1 tablespoon Parsley (optional, for garnish)

Directions

Step 1

Peel the potatoes and grate them coarsely using a box grater. Once grated, place the potatoes in a clean kitchen towel and squeeze out as much excess moisture as possible.

Step 2

In a mixing bowl, combine the grated potatoes, grated cheddar cheese, salt, and black pepper. Mix well until evenly combined.

Step 3

Heat a large non-stick frying pan over medium heat and add 1 tablespoon of butter along with the olive oil. Swirl the pan to coat it evenly.

Divide the potato mixture into four equal portions. For each portion, place the mixture into the hot pan and flatten it gently with a spatula to form a round rosti roughly 1 cm thick.
