Ingredients

  • 4 pieces Flour tortillas
  • 1.5 cups Shredded cheddar cheese
  • 1.5 cups Shredded Monterey Jack cheese
  • 2 medium Red bell peppers
  • 2 medium Green bell peppers
  • 2 tablespoons Olive oil
  • 0.5 teaspoons Ground cumin
  • 0.25 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 2 tablespoons Fresh cilantro
  • 0.5 cups Sour cream (optional, for serving)
  • 0.5 cups Salsa (optional, for serving)

Directions

Step 1

Slice the red and green bell peppers into thin strips and discard the stems and seeds.

Step 2

Preheat a skillet or grill pan over medium heat. Add 1 tablespoon of olive oil to the pan.

Step 3

Place the bell peppers in the skillet and sprinkle them with the ground cumin, salt, and black pepper. Stir occasionally and cook for 6-8 minutes, or until the peppers are softened and slightly charred. Remove from heat and set aside.

Heat a large non-stick skillet over medium-low heat. Lightly brush the surface with the remaining olive oil.
