Ingredients

  • 250 ml Water
  • 100 g Unsalted Butter
  • 1 tsp Salt
  • 125 g All-purpose Flour
  • 4 units Large Eggs
  • 150 g Grated Cheese (Gruyère, Cheddar, or Parmesan)
  • 0.5 tsp Ground Black Pepper
  • 0.25 tsp Nutmeg (optional)

Directions

Step 1

Preheat your oven to 220°C (428°F) and line two baking sheets with parchment paper.

Step 2

In a medium saucepan, combine the water, butter, and salt. Bring to a boil over medium heat until the butter is melted.

Step 3

Reduce the heat to low, add the flour all at once, and stir vigorously with a wooden spoon. Continue to stir until the dough forms a ball and pulls away from the sides of the pan, about 2-3 minutes.

Step 4

Transfer the dough to a large mixing bowl and let it cool slightly, about 5 minutes.

Beat in the eggs one at a time using an electric mixer or by hand, making sure each egg is fully incorporated before adding the next one. The dough should be smooth and glossy.

Stir in the grated cheese, ground black pepper, and nutmeg (if using) until well combined.

Using a pastry bag fitted with a round tip or a spoon, pipe or drop tablespoon-sized rounds of dough onto the prepared baking sheets, spacing them about 2 inches apart.

Bake in the preheated oven for 10 minutes, then reduce the temperature to 180°C (356°F) and continue baking until the puffs are golden brown and crisp, about 15 minutes more.

Once baked, remove from the oven and let cool slightly on a wire rack. Serve warm or at room temperature.
