Ingredients

  • 4 medium russet potatoes
  • 1 cup shredded cheddar cheese
  • 0.5 cup all-purpose flour
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 4 tablespoons vegetable oil
  • 2 tablespoons scallions (optional, for garnish)
  • 0.5 cup sour cream (optional, for serving)

Directions

Step 1

Peel the potatoes and grate them using the large holes of a box grater. Place the grated potatoes in a clean kitchen towel and wring out as much excess liquid as possible.

Step 2

In a large mixing bowl, combine the grated potatoes with the shredded cheddar cheese, flour, egg, garlic powder, salt, and black pepper. Mix until well combined.

Step 3

Heat 2 tablespoons of vegetable oil in a large non-stick skillet over medium heat.

Step 4

Take about 2 tablespoons of the potato mixture and form it into a small pancake shape. Place it in the hot skillet. Repeat this process, cooking 3-4 pancakes at a time, ensuring not to overcrowd the skillet.

Step 5

Cook the pancakes for 3-4 minutes on each side, or until golden brown and crispy. Adjust the heat as necessary to avoid burning.

Step 6

Transfer the cooked pancakes to a plate lined with paper towels to absorb any excess oil. Repeat the process with the remaining potato mixture, adding more oil to the skillet as needed.

Step 7

Serve immediately, garnished with chopped scallions if desired, and with a dollop of sour cream on the side.
