Ingredients

  • 250 grams all-purpose flour
  • 125 grams unsalted butter (cold, cubed)
  • 4 tablespoons cold water
  • 150 grams cheddar cheese (grated)
  • 50 grams cream cheese
  • 2 whole spring onions (sliced finely)
  • 1 teaspoon mustard (Dijon or wholegrain)
  • 1 whole egg (beaten, for egg wash)
  • 0.5 teaspoons salt
  • 0.25 teaspoons pepper

Directions

Step 1

In a large bowl, mix the flour and salt together.

Step 2

Add the cold, cubed butter to the flour, and using your fingertips, rub the butter into the flour until the mixture resembles breadcrumbs.

Step 3

Gradually add the cold water, one tablespoon at a time, mixing with a fork until the dough begins to come together.

Step 4

Turn the dough out onto a lightly floured surface, knead gently into a smooth ball, then wrap in cling film and chill in the fridge for 20 minutes.

Step 5

In a separate bowl, mix the grated cheddar cheese, cream cheese, mustard, and finely sliced spring onions. Season with pepper to taste.

Preheat your oven to 200°C (180°C fan)/400°F/Gas Mark 6.

Step 7

Roll out the chilled pastry on a floured surface until it's about 3mm thick.

Step 8

Using a round cutter (about 12cm in diameter), cut out circles of pastry. Gather and re-roll scraps if needed to make more circles.

Step 9

Place a tablespoon of the cheese filling in the center of each pastry circle. Dampen the edges with a little water, fold the pastry over into a semi-circle, and press the edges together to seal.

Crimp the edges with a fork to fully seal and give a decorative finish.

Step 11

Place the assembled pasties onto a baking tray lined with parchment paper.

Step 12

Brush the tops of the pasties with the beaten egg for a golden finish.

Step 13

Bake in the preheated oven for 20–25 minutes, or until the pasties are golden brown and crisp.

Step 14

Remove from the oven and allow to cool on a wire rack for a few minutes before serving.
