Ingredients

  • 8 oz cream cheese
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 medium sweet onion
  • 3 cloves garlic
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp fresh chives (optional, for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Peel the garlic cloves and place them on a small piece of aluminum foil. Drizzle with 1/2 tablespoon of olive oil and wrap the foil to create a sealed packet. Roast the garlic in the oven for 15 minutes until golden and tender, then let it cool.

Step 3

Meanwhile, finely chop the sweet onion. Heat a skillet over medium-low heat, add the butter and the remaining 1/2 tablespoon of olive oil, and sauté the onion until softened and golden, about 10–12 minutes. Stir occasionally to avoid burning.

In a mixing bowl, combine the cream cheese, sour cream, and shredded cheddar cheese. Mix until smooth using a spatula or hand mixer.

Mash the roasted garlic into a paste and add it to the cheese mixture along with the caramelized onions. Stir well to incorporate.
