Ingredients

  • 1 package puff pastry sheets
  • 200 grams brie cheese or goat cheese
  • 1 egg
  • 1 tablespoon water
  • 2 tablespoons honey
  • 1 teaspoon fresh thyme leaves
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 tablespoon flour (for dusting)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

Lightly flour a clean surface and roll out the puff pastry sheet to about 1/8-inch thick.

Step 3

Using a 2-inch round cutter, cut out 16 circles from the puff pastry. Set aside 8 circles for the bases, and use a smaller round cutter to cut out the centers of the other 8 circles, forming rings.

Step 4

Place the 8 full pastry circles on the prepared baking sheet. Lightly brush the edges with water, then place a pastry ring on top of each to form a raised border.

Whisk the egg with 1 tablespoon of water to create an egg wash. Brush the tops of the pastry pedestals lightly with the egg wash.
