Ingredients

  • 225 grams Gruyère cheese
  • 225 grams Emmental cheese
  • 240 milliliters Dry white wine
  • 1 Garlic clove
  • 1 tablespoon Cornstarch
  • 1 tablespoon Lemon juice
  • 1 tablespoon Kirsch (optional)
  • 0.25 teaspoon Ground nutmeg
  • 0.25 teaspoon Black pepper
  • 0.5 loaf French bread cubed (or other dipping items like vegetables or fruit)

Directions

Step 1

Grate the Gruyère and Emmental cheeses and set them aside.

Step 2

Peel and cut the garlic clove in half, then rub the inside of a fondue pot (or heavy-bottom saucepan) with the cut side of the garlic for added flavor.

Step 3

In a small bowl, combine the cornstarch with a couple of tablespoons of the measured wine to create a smooth slurry. Set this aside.

Step 4

Pour the remaining wine and lemon juice into the pot and heat over medium heat until the liquid is warm but not boiling.

Step 5

Gradually add the grated cheeses to the pot, a handful at a time, stirring constantly in a figure-eight motion to ensure even melting and prevent clumping.

Step 6

Once the cheese has fully melted into a smooth mixture, stir in the cornstarch slurry and continue to cook for 1-2 minutes until the fondue thickens slightly.

Step 7

Stir in the Kirsch (if using), ground nutmeg, and black pepper for extra flavor.

Step 8

Reduce the heat to low to keep the fondue warm and smooth. If the cheese begins to seize or thicken too much, add a splash of additional wine to loosen it.

Step 9

Serve immediately with cubed French bread or other dipping items like steamed vegetables or fruit. Use fondue forks or skewers for dipping.
