Ingredients

  • 4 medium zucchini
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup ricotta cheese
  • 0.5 cup grated Parmesan cheese
  • 0.5 cup shredded mozzarella cheese
  • 0.5 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 2 tablespoons fresh parsley, chopped
  • 0.25 cup breadcrumbs

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.

Step 2

Wash the zucchini and cut them in half lengthwise. Use a spoon to scoop out the seeds and a bit of the flesh to create hollow 'boats.' Be careful not to scoop too deeply so the zucchini holds its shape.

Step 3

Brush the zucchini halves with olive oil and sprinkle with salt and black pepper. Place them on the prepared baking sheet, cut side up, and bake in the preheated oven for 10 minutes.

Step 4

While the zucchini is baking, prepare the cheese filling. In a mixing bowl, combine ricotta cheese, Parmesan cheese, mozzarella cheese, garlic powder, Italian seasoning, and half of the chopped parsley. Mix well until smooth and creamy.

Step 5

Remove the zucchini from the oven. Use a spoon to fill each zucchini boat with the cheese mixture, pressing lightly to pack the filling in.

Step 6

Sprinkle breadcrumbs evenly over the top of the filled zucchini for a crunchy topping.

Step 7

Return the zucchini to the oven and bake for an additional 20 minutes, or until the zucchini is tender and the cheese filling is golden and bubbly.

Step 8

Remove from the oven and let cool for 5 minutes. Garnish with the remaining chopped parsley before serving.

Step 9

Serve warm as a side dish or a light main course. Enjoy your Cheese Filled Zucchini!
