Ingredients

  • 12 pieces Corn tortillas
  • 2 cups Shredded cheddar cheese

  • 0.25 cup Cilantro, finely chopped
  • 2 tablespoons Vegetable oil
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Pepper
  • 0.25 cup Chopped green chilies (optional)

Directions

Step 1

Preheat the oven to 375°F (190°C).

In a medium bowl, combine the shredded cheddar cheese, shredded Monterey Jack cheese, half of the chopped onion, and optional chopped green chilies. Mix well and set aside.

In a small skillet, heat the vegetable oil over medium heat. Briefly warm each corn tortilla (about 10 seconds per side) to make them pliable. Set the warmed tortillas aside, stacked and covered with a clean towel.

Pour 1/2 cup of the green enchilada sauce into the bottom of a 9x13-inch baking dish and spread it evenly.
