Ingredients

  • 2 cups all-purpose flour
  • 1 stick unsalted butter
  • 1 teaspoon salt
  • 1 cup cold water
  • 1.5 cups shredded mozzarella cheese
  • 1.5 cups shredded cheddar cheese
  • 4 ounces cream cheese
  • 1 large egg
  • 1 large egg yolk
  • 2 tablespoons milk

Directions

Step 1

In a large bowl, combine flour and salt. Cut the unsalted butter into small pieces and use your fingers or a pastry cutter to mix it into the flour until it resembles coarse crumbs.

Step 2

Gradually add cold water, a tablespoon at a time, mixing until the dough just comes together. Do not overmix. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.

In a medium bowl, combine mozzarella cheese, cheddar cheese, and cream cheese. Blend thoroughly using a fork until smooth and well mixed.

Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.

Retrieve the dough from the refrigerator and roll it out on a floured surface to about 1/8 inch thick.
