Ingredients

  • 6 large eggs
  • 2 tablespoons milk
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 cup cheddar cheese, shredded
  • 6 slices bacon strips
  • 1 medium red bell pepper, diced
  • 1 medium green bell pepper, diced
  • 1 tablespoon unsalted butter
  • 1 teaspoon olive oil

Directions

Step 1

Heat a large skillet over medium heat and add the bacon slices. Cook the bacon for 4-5 minutes on each side or until crispy. Remove the bacon from the pan and place it on a paper towel-lined plate to drain. Once cool, crumble the bacon into small pieces and set aside.

Step 2

In the same skillet, drain most of the bacon grease, leaving about 1 teaspoon. Add the olive oil and diced red and green bell peppers. Sauté for 4-6 minutes until the peppers are softened. Remove the peppers from the skillet and set aside.
