Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
Roll out both sheets of pie crust onto a floured surface and cut each into 9 equal squares using a pizza cutter or knife.
In a medium bowl, mix the cream cheese, granulated sugar, vanilla extract, lemon juice, and egg yolk until smooth and creamy.
