Ingredients

  • 300 g self-raising flour
  • 50 g unsalted butter
  • 150 ml milk
  • 2 tbsp Vegemite
  • 150 g shredded cheddar cheese
  • 2 tbsp extra milk (for brushing)

Directions

Step 1

Preheat your oven to 200°C (390°F). Line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, sift the self-raising flour. Add the unsalted butter and rub it into the flour with your fingertips until the mixture resembles breadcrumbs.

Step 3

Make a well in the center of the flour mixture and pour in the milk. Use a butter knife to gently mix until a soft dough forms.

Step 4

Transfer the dough onto a lightly floured surface and knead gently for 1-2 minutes until smooth.

Step 5

Roll the dough into a rectangle approximately 30cm x 20cm (12 inches x 8 inches).

Spread the Vegemite evenly over the dough using the back of a spoon or a butter knife.

Sprinkle the shredded cheddar cheese evenly over the Vegemite layer.

Starting from one long edge, tightly roll the dough into a log shape.

Using a sharp knife, cut the log into 12 even slices and place them cut-side up on the prepared baking sheet, spacing them slightly apart.

Brush the tops of the scrolls lightly with extra milk for a golden finish.

Bake in the preheated oven for 15-20 minutes or until golden brown and the cheese is bubbly.
