  • 2 cups Shredded cheddar cheese

  • 2 tablespoons Fresh cilantro (optional)
  • 0.5 cups Sour cream (for serving, optional)

Directions

Step 1

Finely dice the fresh tomatoes and, if using, chop the fresh cilantro. Set them aside.

Step 2

Place a flour tortilla on a clean work surface and spread 1/4 cup of shredded cheddar cheese evenly on one half of the tortilla.

Step 3

Sprinkle about 1/4 of the diced tomatoes over the cheese. Add a pinch of salt, ground black pepper, and some chopped cilantro, if desired.

Fold the tortilla in half to create a semi-circle. Press gently to secure the filling.

Repeat with the remaining tortillas and ingredients to make a total of 4 quesadillas.
