Ingredients

  • 250 grams Fresh spinach
  • 200 grams Ricotta cheese
  • 100 grams Cream cheese
  • 50 grams Grated Parmesan cheese
  • 3 pieces Large eggs
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Nutmeg
  • 2 tablespoons Olive oil
  • 1 loaf Crusty baguette
  • 30 grams Butter
  • 2 pieces Garlic cloves
  • 10 pieces Fresh basil leaves

Directions

Step 1

Preheat the oven to 180°C (350°F).

Step 2

Blanch the spinach in boiling water for 1-2 minutes until wilted. Drain it well, squeezing out excess water, and chop finely.

Step 3

In a mixing bowl, combine the spinach, ricotta cheese, cream cheese, grated Parmesan, eggs, salt, black pepper, and nutmeg. Mix thoroughly until smooth and evenly combined.

Step 4

Line a baking tray with parchment paper. Spread the spinach and cheese mixture evenly into a rectangular shape, about 1 cm thick.

Step 5

Bake the spinach mixture in the preheated oven for 12-15 minutes, or until it sets and feels firm to the touch.

Once baked, remove from the oven and allow the mixture to cool slightly. Use the parchment paper to help roll it into a tight log (like a roulade). Wrap it in the parchment and chill it in the refrigerator for at least 30 minutes.
