  • 2 cups water

  • 4 cups baby spinach, chopped

  • 0.5 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon red pepper flakes (optional)

Directions

Step 1

Rinse the rice thoroughly under cold water to remove excess starch.

Step 2

In a medium saucepan, bring 2 cups of water to a boil. Add the rice and a pinch of salt, lower the heat to a simmer, cover with a tight-fitting lid, and cook for 15 minutes or until the rice absorbs all the water. Remove from heat and let it rest, covered, for 5 minutes. Fluff with a fork and set aside.
