Ingredients

  • 2 cups All-purpose flour
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Ground black pepper
  • 2 large Eggs
  • 1 cup Milk
  • 0.25 cups Olive oil
  • 1.5 cups Cheddar cheese, shredded
  • 1 cup Spinach, fresh and chopped
  • 2 tablespoons Green onion, finely chopped
  • 0.25 teaspoons Paprika (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin or line it with paper baking cups.

Step 2

In a large bowl, whisk together the all-purpose flour, baking powder, salt, and black pepper until evenly combined.

Step 3

In a separate medium bowl, beat the eggs, milk, and olive oil until smooth and well blended.

Step 4

Gradually pour the wet ingredients into the dry ingredients, stirring gently until just combined. Be careful not to overmix.

Step 5

Fold in the shredded cheddar cheese, chopped spinach, and green onion until evenly distributed throughout the batter.

Step 6

Spoon the batter evenly into the prepared muffin tin, filling each cup about 3/4 full.

Step 7

If desired, sprinkle a pinch of paprika on top of each muffin for added color and flavor.

Step 8

Bake in the preheated oven for 18-20 minutes, or until the muffins are golden brown on top and a toothpick inserted in the center comes out clean.

Step 9

Remove the muffins from the oven and let them cool in the tin for 5 minutes. Then transfer them to a wire rack to cool completely or serve warm.
