Ingredients

  • 400 g fettuccine pasta
  • 2 tbsp butter
  • 3 pcs garlic cloves
  • 1 cup heavy cream
  • 0.5 cup milk
  • 120 g cream cheese
  • 1 cup grated Parmesan cheese
  • 150 g baby spinach leaves
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 tsp olive oil
  • 4 liters water

Directions

Step 1

Bring a large pot of water to a boil and add 1 tsp of olive oil and a generous pinch of salt. Cook the fettuccine pasta according to the package instructions or until al dente, then drain and set aside.

Step 2

While the pasta cooks, melt the butter in a large skillet over medium heat.

Step 3

Finely mince the garlic cloves and sauté in the butter for 1-2 minutes until fragrant but not browned.

Step 4

Slowly pour in the heavy cream and milk, stirring to combine, then add the cream cheese in small chunks.

Step 5

Stir continuously until the cream cheese melts and the mixture is smooth, about 3-4 minutes.

Step 6

Add the grated Parmesan cheese gradually, stirring to create a creamy sauce. Season with salt and black pepper.

Step 7

Reduce the heat to low and toss the spinach leaves into the sauce. Cook for 2-3 minutes until the spinach wilts.

Step 8

Add the cooked fettuccine pasta to the skillet and toss it gently to coat the pasta evenly with the sauce.

Step 9

Taste and adjust seasoning if needed. Serve immediately, garnished with extra Parmesan cheese if desired.
