Ingredients

  • 350 grams all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 50 grams butter (cold, cubed)
  • 100 grams cheddar cheese (grated)
  • 1 tablespoon fresh sage leaves (finely chopped)
  • 180 milliliters milk
  • 50 milliliters water
  • 30 grams extra grated cheese (for topping)
  • 4 leaves extra sage leaves (optional, for garnish)

Directions

Step 1

Preheat your oven to 200°C (390°F) and line a baking tray with parchment paper.

Step 2

In a large mixing bowl, combine the all-purpose flour, baking powder, and salt.

Step 3

Add the cubed butter to the dry ingredients. Use your fingertips to rub the butter into the flour mixture until it resembles coarse breadcrumbs.

Step 4

Stir in the grated cheese and chopped sage leaves until evenly distributed.

Step 5

In a separate bowl or jug, mix the milk and water together.

Step 6

Make a well in the center of the dry ingredients and gradually pour in the milk mixture, stirring with a butter knife or spoon until the dough begins to come together. Be careful not to overmix.

Step 7

Turn the dough out onto a lightly floured surface and gently knead it for about 30 seconds to bring it together. Shape the dough into a round loaf approximately 15 cm (6 inches) in diameter.

Step 8

Place the shaped dough onto the prepared baking tray. Use a sharp knife to score a cross on the top, about 1 cm (0.5 inches) deep.

Step 9

Sprinkle the extra grated cheese over the top, and if desired, place extra sage leaves decoratively on the loaf.

Step 10

Bake in the preheated oven for 25-30 minutes, or until the damper is golden brown and sounds hollow when tapped on the bottom.

Step 11

Allow the damper to cool slightly on a wire rack before serving warm with butter or alongside soups and stews.
