  • 3 medium Yellow onions (thinly sliced)
  • 1 teaspoons Granulated sugar
  • 3 large Eggs
  • 200 milliliters Heavy cream
  • 150 grams Cheddar cheese (grated)
  • 50 grams Parmesan cheese (grated)
  • 0.25 teaspoons Black pepper
  • 1 pinch Nutmeg (optional)

Directions

Step 1

Prepare the pastry base: In a bowl, mix the flour and salt. Add the cold, cubed butter and use your fingertips to rub it into the flour until the mixture resembles breadcrumbs. Add the cold water and mix until the dough comes together. Wrap the dough in plastic wrap and refrigerate for 20 minutes.

Step 2

Preheat your oven to 180°C (350°F). Roll out the chilled pastry dough on a lightly floured surface and fit it into a 9-inch tart tin. Trim any excess dough and prick the base with a fork.
