Ingredients

  • 6 large sausages
  • 150 grams cheddar cheese
  • 1 large yellow onion
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 2 cloves garlic
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon fresh parsley
  • 12 pieces toothpicks

Directions

Step 1

Preheat your oven to 180°C (350°F).

Step 2

Finely dice the onion and garlic.

Step 3

In a skillet, heat the butter and olive oil over medium heat. Add the diced onion and cook for 5-7 minutes until soft and caramelized.

Step 4

Add the garlic to the skillet and cook for 1-2 minutes until fragrant. Season with salt and black pepper. Remove from heat and let the mixture cool slightly.

Step 5

Grate the cheddar cheese and finely chop the parsley. In a small bowl, combine the caramelized onions, grated cheese, and parsley to create the stuffing mixture.

Step 6

Using a sharp knife, carefully make a shallow slit along the length of each sausage, being careful not to cut all the way through. Gently open the sausage and stuff it with the cheese and onion mixture.

Step 7

Use toothpicks to secure the sausages if needed, ensuring the stuffing stays in place during cooking.

Step 8

Place the stuffed sausages on a baking sheet or in an oven-safe dish and bake for 20-25 minutes, or until the sausages are cooked through and the cheese is melted and bubbly.

Step 9

Remove the sausages from the oven, discard the toothpicks, and serve hot. Garnish with additional parsley if desired.
