Ingredients

  • 200 grams All-purpose flour
  • 100 grams Unsalted butter
  • 3 tablespoons Cold water
  • 1 tablespoon Olive oil
  • 2 medium Yellow onion
  • 3 large Eggs
  • 200 milliliters Heavy cream
  • 150 grams Shredded cheddar cheese
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 1 teaspoon Fresh thyme leaves (optional)

Directions

Step 1

In a mixing bowl, combine the all-purpose flour and a pinch of salt. Add the unsalted butter, cut into cubes, and use your fingertips to rub it into the flour until the mixture resembles breadcrumbs.

Step 2

Add cold water, one tablespoon at a time, until the dough comes together. Form the dough into a disk, wrap it in plastic wrap, and chill in the refrigerator for 20 minutes.

Step 3

Preheat your oven to 375°F (190°C).

Step 4

Roll out the chilled dough on a lightly floured surface to fit a 9-inch (23 cm) tart pan. Gently press the dough into the pan and trim off any excess around the edges. Prick the base with a fork and chill the crust for another 10 minutes.

Step 5

Line the crust with parchment paper and fill it with pie weights or dried beans. Bake the crust for 15 minutes, then remove the parchment and weights and bake for another 5-7 minutes until lightly golden. Set aside to cool.

Step 6

While the crust cools, heat olive oil in a skillet over medium heat. Slice the yellow onions thinly and cook them in the oil, stirring occasionally, until caramelized. This should take about 15 minutes. Set the onions aside to cool slightly.

Step 7

In a medium bowl, whisk together the eggs, heavy cream, salt, black pepper, and fresh thyme leaves if using.

Step 8

Spread the caramelized onions evenly over the baked crust. Sprinkle the shredded cheddar cheese on top.

Step 9

Pour the egg and cream mixture over the onions and cheese, ensuring it is evenly distributed.

Step 10

Bake the quiche in the preheated oven for 30-35 minutes, or until the filling is set and the top is golden brown.

Step 11

Remove the quiche from the oven and allow it to cool for 10 minutes before slicing. Serve warm or at room temperature.
