Ingredients

  • 300 grams Plain flour
  • 150 grams Unsalted butter
  • 3 tablespoons Cold water
  • 3 medium Onions
  • 250 grams Cheddar cheese
  • 1 large Egg
  • 100 milliliters Heavy cream
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Start by making the pastry. In a large bowl, combine the flour and a pinch of salt. Add the unsalted butter (cold and cubed) into the flour and rub it in with your fingertips until the mixture resembles breadcrumbs.

Step 2

Add the cold water, one tablespoon at a time, and mix until the dough just comes together. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 20 minutes.

Step 3

While the dough chills, prepare the filling. Thinly slice the onions. Heat the olive oil in a frying pan over medium heat, then add the onions and cook gently until golden and caramelized (about 10-15 minutes). Remove from heat and set aside.

Step 4

Grate the cheddar cheese and set it aside.

Step 5

In a bowl, whisk the egg and heavy cream together, then season with salt and black pepper.

Step 6

Preheat your oven to 200°C (400°F).

Step 7

Roll out the chilled pastry dough on a floured surface until it's large enough to line a 9-inch pie dish. Gently press the dough into the dish, trimming any excess around the edges.

Step 8

Spread the caramelized onions evenly over the base of the pastry. Top with the grated cheddar cheese.

Step 9

Pour the egg and cream mixture over the cheese and onions, ensuring it is evenly distributed.

Step 10

Roll out the remaining pastry dough and place it over the filling. Press the edges together to seal and trim off any excess. Crimp the edges for a decorative finish, if desired.

Step 11

Cut a small cross or slit in the center of the pie to allow steam to escape during baking.

Step 12

Bake the pie in the preheated oven for 35-40 minutes, or until the pastry is golden brown and crisp.

Step 13

Allow the cheese and onion pie to cool slightly before slicing and serving. Enjoy!
