Ingredients

  • 3 cups self-raising flour
  • 1 cup cheddar cheese, shredded
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh thyme leaves
  • 0.5 teaspoon salt
  • 50 grams unsalted butter, chilled and cubed
  • 1 cup milk
  • 1 large egg, lightly beaten
  • 0.25 cup extra cheddar cheese, shredded (for topping)

Directions

Step 1

Preheat your oven to 200°C (390°F) and line a baking tray with baking paper.

Step 2

In a large mixing bowl, sift the self-raising flour and salt together.

Step 3

Add the chilled, cubed butter to the flour mixture and use your fingertips to rub the butter into the flour until the mixture resembles fine breadcrumbs.

Step 4

Stir in the shredded cheddar cheese, chopped parsley, and thyme leaves.

Step 5

In a separate small bowl, combine the milk and beaten egg. Reserve 1 tablespoon of this mixture for brushing the top of the damper later.

Step 6

Gradually pour the milk and egg mixture into the dry ingredients, stirring with a wooden spoon until the dough just comes together.

Step 7

Turn the dough out onto a lightly floured surface and gently knead for about 30 seconds, just enough to bring it together. Avoid overworking the dough.

Shape the dough into a round loaf approximately 15 cm (6 inches) in diameter and place it onto the prepared baking tray.
