Ingredients

  • 250 grams all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon granulated sugar
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 100 grams sharp cheddar cheese, grated
  • 3 tablespoons fresh chives, finely chopped
  • 75 grams unsalted butter, melted and cooled
  • 180 milliliters milk
  • 2 pieces large eggs
  • 120 grams cream cheese, cubed
  • 50 grams extra grated cheddar cheese for topping

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a 12-cup muffin tin with paper liners or grease the tin well with butter.

Step 2

In a large mixing bowl, sift together the flour and baking powder. Stir in the sugar, salt, black pepper, grated cheddar cheese, and chopped chives, ensuring they are evenly mixed.

Step 3

In a separate bowl, whisk together the melted butter, milk, and eggs until fully combined.

Step 4

Make a well in the center of the dry ingredients and pour in the wet mixture. Gently fold the ingredients together with a spatula or spoon until just combined. Be careful not to overmix; the batter should be slightly lumpy.

Step 5

Fill each muffin cup halfway with the batter. Place a cube of cream cheese in the center of each cup, then top with more batter until each muffin cup is about two-thirds full.

Step 6

Sprinkle the extra grated cheddar cheese evenly over the tops of the muffins.

Step 7

Bake in the preheated oven for 18-20 minutes, or until the muffins are golden brown and a toothpick inserted into the edge of a muffin (avoiding the cream cheese center) comes out clean.

Step 8

Remove the muffins from the oven and allow them to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely or enjoy warm for a gooey center.

Step 9

Serve the muffins as a savory snack, a breakfast treat, or a side dish alongside soups or salads.
