Ingredients

  • 150 g Unsalted butter (cold)
  • 300 g All-purpose flour
  • 8 tbsp Ice water
  • 200 g Smoked bacon (diced)
  • 150 g Cheddar cheese (grated)
  • 2 Eggs (beaten)
  • 1 small Onion (finely chopped)
  • 2 small Potatoes (finely diced)
  • 1 tsp Salt
  • 0.5 tsp Black pepper (freshly ground)
  • 2 tbsp Milk (for brushing)

Directions

Step 1

In a large mixing bowl, combine the flour and a pinch of salt.

Step 2

Add the cold butter to the flour and use your fingers to rub it in until the mixture resembles coarse breadcrumbs.

Gradually add the ice water, one tablespoon at a time, and mix with a fork until the dough just comes together.

Turn the dough out onto a floured surface and knead gently for 1 minute. Wrap it in plastic wrap and refrigerate for at least 30 minutes.

While the pastry is chilling, cook the diced bacon in a skillet over medium heat until crispy. Remove and set aside.
