Ingredients

  • 3 cups sweetened shredded coconut
  • 4 large egg whites
  • 0.75 cups granulated sugar
  • 1 teaspoon vanilla extract
  • 0.5 teaspoons almond extract
  • 0.25 teaspoons salt
  • 0.75 cups maraschino cherries, chopped
  • 0.5 cups semi-sweet chocolate, melted (optional for drizzling)

Directions

Step 1

Preheat the oven to 325°F (160°C) and line two baking sheets with parchment paper or silicone baking mats.

Step 2

In a large mixing bowl, combine the sweetened shredded coconut, granulated sugar, vanilla extract, almond extract, and salt. Stir until well distributed.

Step 3

In a medium bowl, use a hand mixer or whisk to beat the egg whites until they form soft peaks.

Step 4

Gently fold the beaten egg whites into the coconut mixture, ensuring the ingredients are evenly incorporated without deflating the egg whites.

Step 5

Add the chopped maraschino cherries to the mixture and carefully fold until the cherries are evenly dispersed.

Step 6

Using a small cookie scoop or two spoons, drop rounded tablespoons of the mixture onto the prepared baking sheets, spacing them about 1 inch apart.

Step 7

Bake in the preheated oven for 20–25 minutes, or until the macaroons are lightly golden on the edges. Rotate the baking sheets halfway through for even baking.

Step 8

Remove the macaroons from the oven and allow them to cool on the baking sheets for 5 minutes before transferring to wire racks to cool completely.

Step 9

If desired, drizzle melted semi-sweet chocolate over the cooled macaroons for an extra touch of indulgence. Allow the chocolate to set before serving.

Step 10

Store the macaroons in an airtight container at room temperature for up to 5 days or in the refrigerator for up to a week.
