Ingredients

  • 2 cups Cheerios cereal
  • 1 cup Old-fashioned rolled oats
  • 1 cup All-purpose flour
  • 1 teaspoon Baking soda
  • 0.5 teaspoon Salt
  • 1 medium Ripe banana, mashed
  • 0.5 cup Creamy peanut butter
  • 0.5 cup Honey
  • 0.25 cup Unsweetened applesauce
  • 1 teaspoon Vanilla extract
  • 0.5 cup Mini chocolate chips (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Step 2

In a large mixing bowl, combine the Cheerios cereal, rolled oats, all-purpose flour, baking soda, and salt. Mix well to distribute the dry ingredients evenly.

Step 3

In a separate medium bowl, mash the ripe banana until smooth. Add the peanut butter, honey, applesauce, and vanilla extract. Stir until thoroughly combined.

Step 4

Pour the wet mixture into the bowl with the dry ingredients. Stir to combine, ensuring all the ingredients are evenly mixed. The dough will be thick and slightly sticky.

Step 5

If desired, fold in the mini chocolate chips for an extra touch of sweetness.

Step 6

Using a 1/4-cup measuring scoop or your hands, portion out the dough and form it into large cookies. Flatten each cookie slightly and place them on the prepared baking sheets, leaving about 2 inches between them.

Step 7

Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown and the cookies feel firm yet soft to the touch.

Step 8

Remove the cookies from the oven and allow them to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.

Step 9

Once cooled, store the jumbo breakfast cookies in an airtight container at room temperature for up to 4 days, or in the fridge for up to a week.
