Ingredients

  • 1 cup Cheerios cereal
  • 1.5 cups All-purpose flour
  • 2 teaspoons Baking powder
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoons Salt
  • 1 cup Unsweetened applesauce
  • 0.5 cup Plain Greek yogurt
  • 1 large Egg
  • 0.25 cup Honey
  • 1 teaspoon Vanilla extract
  • 0.25 cup Milk

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or grease it lightly with cooking spray.

Step 2

Place the Cheerios in a food processor or blender and pulse until finely ground to a flour-like consistency. Set aside.

Step 3

In a large mixing bowl, whisk together the ground Cheerios, all-purpose flour, baking powder, ground cinnamon, and salt.

Step 4

In a separate medium bowl, combine the applesauce, Greek yogurt, egg, honey, vanilla extract, and milk. Stir until well blended.

Step 5

Make a well in the center of the dry ingredients and pour in the wet mixture. Gently fold together until just combined, being careful not to overmix.

Step 6

Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full.

Step 7

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 8

Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Step 9

Serve warm or at room temperature and enjoy! Store leftovers in an airtight container at room temperature for up to 3 days or in the refrigerator for up to 1 week.
