Ingredients

  • 100 grams Rice flour
  • 50 grams Tapioca flour
  • 30 grams Cornstarch
  • 400 ml Water
  • 1 tablespoon Cooking oil
  • 0.5 teaspoon Salt
  • 3 tablespoons Soy sauce
  • 1 teaspoon Sugar
  • 1 tablespoon Oyster sauce
  • 1 teaspoon Sesame oil
  • 2 finely chopped Spring onions

Directions

Step 1

In a large mixing bowl, combine rice flour, tapioca flour, and cornstarch. Gradually add 400 ml of water, stirring constantly until you achieve a smooth batter.

Step 2

Add 1 tablespoon of cooking oil and 0.5 teaspoon of salt to the batter, and mix well.

Step 3

Prepare a steaming setup with a large pot or wok with a lid, add a steaming rack, and fill with water just below the rack. Bring the water to a rolling boil.

Step 4

Lightly oil a shallow rectangular pan or tray that will fit inside your steaming setup.

Step 5

Pour a thin layer of the batter (approximately 1 ladle) into the oiled pan, swirling to cover evenly.

Step 6

Place the tray onto the steaming rack, cover the pot with a lid, and steam for about 2-3 minutes or until the noodle sheet becomes translucent.

Step 7

Remove the tray carefully using oven mitts or tongs. Allow the sheet to cool slightly, and gently use a spatula to lift one end and roll it into a cylindrical shape. Repeat the process with the remaining batter.

Step 8

For the sauce, combine 3 tablespoons of soy sauce, 1 teaspoon of sugar, 1 tablespoon of oyster sauce, and 1 teaspoon of sesame oil in a small saucepan over low heat. Stir until sugar dissolves. Remove from heat.

Step 9

Arrange the noodle rolls on a serving plate, drizzle the prepared sauce over them generously.

Step 10

Garnish with finely chopped spring onions before serving. Enjoy your homemade Chee Cheong Fun!
