  • 2 medium-sized zucchini

Directions

Step 1

Grate the zucchinis using a box grater and place them in a colander. Sprinkle with a pinch of salt and let sit for 10 minutes to draw out moisture.

After 10 minutes, use a clean kitchen towel or cheesecloth to squeeze as much liquid as possible out of the zucchini. This helps achieve crispy fritters.

Step 3

In a large mixing bowl, combine the drained zucchini, shredded cheddar cheese, all-purpose flour, eggs, chopped green onions, minced garlic, salt, and black pepper. Stir until well combined.
