Ingredients

  • 200 grams All-purpose flour
  • 100 grams Unsalted butter
  • 4 tablespoons Cold water
  • 1 large Egg
  • 120 milliliters Heavy cream
  • 150 grams Sharp cheddar cheese
  • 0.25 teaspoons Ground black pepper
  • 0.25 teaspoons Salt
  • 1 tablespoon Chives (optional, for garnish)

Directions

Step 1

Preheat your oven to 180°C (350°F).

Step 2

In a mixing bowl, combine the all-purpose flour and unsalted butter. Use your fingers or a pastry cutter to rub the butter into the flour until the mixture resembles breadcrumbs.

Step 3

Add the cold water one tablespoon at a time, mixing until the dough comes together. Form into a disk, wrap in plastic wrap, and refrigerate for 15 minutes.

Roll out the chilled dough on a lightly floured surface to about 3mm thickness. Use a round cutter to cut out circles slightly larger than your tart tins.
