Ingredients

  • 4 pieces Large tomatoes
  • 1 cup Sharp cheddar cheese
  • 0.5 cup Panko breadcrumbs
  • 2 tablespoons Fresh parsley
  • 2 tablespoons Fresh basil
  • 2 cloves Garlic
  • 2 tablespoons Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 cup Parmesan cheese (optional for topping)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking dish with parchment paper or lightly grease it with olive oil.

Step 2

Wash and dry the tomatoes. Cut off the tops and use a small spoon to hollow out the seeds and pulp, being careful not to puncture the sides or bottoms. Set the hollowed-out tomatoes aside.

Step 3

Finely chop the fresh parsley and basil. Mince the garlic.

Step 4

In a mixing bowl, combine the cheddar cheese, panko breadcrumbs, parsley, basil, minced garlic, olive oil, salt, and black pepper. Stir until the mixture is evenly combined.

Step 5

Spoon the cheddar mixture into the hollowed-out tomatoes, packing it lightly but not overstuffing.

Step 6

Optional: Sprinkle a little grated Parmesan cheese on top of the fillings for an extra golden-brown crust.

Step 7

Place the filled tomatoes into the prepared baking dish. Bake in the preheated oven for 18-20 minutes, or until the tomatoes are tender and the cheese is melted and bubbly.

Step 8

Remove from the oven and allow to cool for 5 minutes before serving. Serve warm as a side dish or appetizer and enjoy!
