Ingredients

  • 16 pieces Button mushrooms
  • 2 tablespoons Olive oil
  • 1 cup Cheddar cheese, shredded
  • 4 ounces Cream cheese, softened
  • 2 cloves Garlic, minced
  • 0.25 cup Bread crumbs
  • 2 tablespoons Fresh parsley, chopped
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Parmesan cheese, grated

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Clean the mushrooms by wiping them with a damp paper towel and remove the stems, setting the caps aside. Chop the stems finely and reserve them for the filling.

Step 3

Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped mushroom stems and minced garlic. Sauté for 4-5 minutes, or until softened and fragrant. Remove from heat and let cool slightly.

Step 4

In a medium bowl, combine the sautéed mushroom stems, cream cheese, cheddar cheese, bread crumbs, parsley, salt, black pepper, and Parmesan cheese. Mix well until the filling is evenly incorporated.

Step 5

Brush the inside and outside of the mushroom caps with the remaining 1 tablespoon of olive oil. Place them on a baking sheet lined with parchment paper, cavity-side up.

Spoon the prepared filling generously into each mushroom cap, pressing slightly to compact.

Bake in the preheated oven for 18-20 minutes, or until the tops are golden and the cheese is bubbling.

Allow the mushrooms to cool for 5 minutes before serving. Garnish with additional parsley if desired and serve warm.
