Ingredients

  • 6 Large eggs
  • 0.5 cup Sharp cheddar cheese, shredded
  • 3 tablespoons Mayonnaise
  • 1 teaspoon Dijon mustard
  • 0.25 teaspoon Smoked paprika
  • 0.25 teaspoon Salt
  • 0.125 teaspoon Black pepper
  • 1 tablespoon Chives, finely chopped (optional, for garnish)

Directions

Step 1

Place the eggs in a single layer in a saucepan and cover them with cold water by about 1 inch.

Step 2

Bring the water to a boil over medium-high heat. Once boiling, reduce the heat to low and cover the pan. Allow the eggs to simmer gently for 9-10 minutes.

Step 3

Remove the eggs from the hot water and transfer them to a bowl of ice water. Let them cool for at least 5 minutes.

Step 4

Carefully peel the eggs under cool running water, then slice each egg in half lengthwise.

Step 5

Scoop out the yolks and place them in a mixing bowl. Arrange the egg white halves on a serving plate.

Step 6

Using a fork, mash the yolks until they are crumbly and smooth.

Step 7

Add the shredded cheddar cheese, mayonnaise, Dijon mustard, smoked paprika, salt, and black pepper to the yolks. Mix until well combined into a creamy filling.

Step 8

Spoon or pipe the cheddar filling into the egg white halves, mounding slightly.

Step 9

Optional: Garnish with a sprinkle of chopped chives or an extra dash of smoked paprika.

Step 10

Refrigerate the stuffed eggs for at least 15 minutes before serving to allow the flavors to meld. Serve chilled and enjoy.
