Preheat the oven to 375°F (190°C).
In a large mixing bowl, combine the all-purpose flour, 1/2 cup shredded cheddar cheese, granulated sugar, and salt.
Cut the cold unsalted butter into small cubes and add to the flour mixture. Use a pastry blender or your fingers to work the butter into the flour until it forms pea-sized crumbs.
Gradually add the ice water, 1 tablespoon at a time, mixing with a fork just until the dough comes together. Divide the dough in half, shape into disks, wrap in plastic wrap, and refrigerate for at least 30 minutes.
While the dough chills, prepare the filling. In a large bowl, toss the sliced pears with brown sugar, cornstarch, ground cinnamon, and ground nutmeg until evenly coated.
On a floured surface, roll out one of the dough disks into a circle about 12 inches in diameter. Carefully transfer it to a 9-inch pie dish, pressing it gently into the bottom and sides.
Sprinkle the remaining 1/2 cup of shredded cheddar cheese evenly over the bottom of the crust. Spoon the pear filling on top of the cheese.
Roll out the second dough disk into another 12-inch circle. Place it over the filling, then trim and crimp the edges to seal. Cut a few small slits in the top crust to allow steam to escape.
In a small bowl, whisk together the egg and tablespoon of milk to create an egg wash. Brush it evenly over the top crust for a golden finish.
Place the pie on a baking sheet to catch any drips and bake in the preheated oven for 50 minutes, or until the crust is golden brown and the filling is bubbly.
Allow the pie to cool for at least 2 hours to set before slicing and serving.
