  • 60 grams grated Parmesan cheese
  • 60 grams unsalted butter (cold, cubed)
  • 120 grams all-purpose flour
  • 10 grams cornstarch
  • 2 grams kosher salt
  • 1 gram paprika (optional, for added color and flavor)
  • 15 milliliters cold water

Directions

Step 1

Preheat your oven to 180°C (350°F) and line two baking sheets with parchment paper.

In a food processor, combine the cheddar cheese, Parmesan cheese, and cold cubed butter. Pulse until the mixture resembles coarse crumbs.

Add the flour, cornstarch, kosher salt, and paprika (if using) to the food processor. Pulse again until combined.
