Ingredients

  • 2 cups All-purpose flour
  • 1 tablespoon Baking powder
  • 1 tablespoon Granulated sugar
  • 0.5 teaspoon Salt
  • 0.5 cup Unsalted butter (cold, cubed)
  • 1 cup Sharp cheddar cheese (shredded)
  • 0.5 cup Green onions (thinly sliced)
  • 0.75 cup Buttermilk (plus extra for brushing)

Directions

Step 1

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or a silicone baking mat.

Step 2

In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt until well combined.

Step 3

Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingertips, cut the butter into the flour until the mixture resembles coarse crumbs with pea-sized bits of butter.

Step 4

Gently fold in the shredded cheddar cheese and sliced green onions until evenly distributed.

Step 5

Create a well in the center of the mixture and pour in the buttermilk. Use a wooden spoon or spatula to mix until the dough just comes together. Do not overmix—the dough should be slightly sticky.

Step 6

Turn the dough out onto a lightly floured surface. Pat it into a rectangle approximately 1 inch thick. Fold the dough over itself 2-3 times to create layers, then pat it back into a rectangle.

Step 7

Using a 2.5-inch biscuit cutter (or a glass), cut out rounds from the dough. Press straight down without twisting for the best rise. Re-roll the scraps as needed and continue cutting until all the dough is used.

Step 8

Place the biscuits onto the prepared baking sheet, leaving about 1 inch of space between them. Brush the tops lightly with additional buttermilk for a golden finish.

Step 9

Bake in the preheated oven for 13-15 minutes, or until the biscuits are golden brown and puffed.

Step 10

Remove from the oven and let cool slightly before serving. Enjoy warm with butter, or as is.
