Ingredients

  • 2 tablespoons Unsalted butter
  • 2 medium (thinly sliced) Yellow onions
  • 6 slices Bread (sturdy, day-old or slightly stale)
  • 200 grams Cheddar cheese (sharp, grated)
  • 250 milliliters Whole milk
  • 150 milliliters Heavy cream
  • 3 large Eggs
  • 1 tablespoon Dijon mustard
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Fresh thyme leaves (optional)
  • 1 teaspoon Olive oil

Directions

Step 1

Preheat your oven to 180°C (350°F) and lightly grease a medium-sized baking dish.

Step 2

In a large skillet, heat olive oil and 1 tablespoon of butter over medium heat. Add the thinly sliced onions and a pinch of salt, cooking gently for 15-20 minutes until soft and caramelized. Stir occasionally to ensure they don't burn.

While the onions are caramelizing, butter the slices of bread with the remaining butter and cut them into triangles or squares.
