Ingredients

  • 2.5 cups All-purpose flour
  • 0.5 teaspoons Salt
  • 1 cup Unsalted butter, chilled and cubed
  • 1 cup Sharp cheddar cheese, shredded
  • 0.25 cup Ice water
  • 6 pcs Granny Smith apples, peeled, cored, and sliced thin
  • 0.75 cups Granulated sugar
  • 0.25 cups Brown sugar
  • 1 teaspoons Ground cinnamon
  • 0.25 teaspoons Ground nutmeg
  • 2 tablespoons All-purpose flour (for the filling)
  • 1 tablespoons Lemon juice
  • 1 pcs Egg, beaten (for egg wash)
  • 2 tablespoons Coarse sugar (optional)

Directions

Step 1

In a large mixing bowl, whisk together 2.5 cups of all-purpose flour and 0.5 teaspoons of salt.

Step 2

Using a pastry cutter or your fingers, cut in 1 cup of chilled unsalted butter cubes until the mixture resembles coarse crumbs.

Step 3

Fold in 1 cup of shredded sharp cheddar cheese until evenly distributed.

Step 4

Gradually add 0.25 cup of ice water, mixing gently with a fork until the dough comes together. Add an additional tablespoon of water if needed, but do not overmix.

Step 5

Divide the dough into two equal portions, shape each into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Step 6

Preheat the oven to 400°F (200°C).

Step 7

In a large bowl, combine the sliced Granny Smith apples, 0.75 cups granulated sugar, 0.25 cups brown sugar, 1 teaspoon ground cinnamon, 0.25 teaspoons ground nutmeg, 2 tablespoons all-purpose flour, and 1 tablespoon lemon juice. Toss until the apples are evenly coated.

Step 8

Roll out one disk of the chilled cheddar crust dough on a floured surface to fit a 9-inch pie dish. Drape the dough over the dish and press gently into the edges.

Step 9

Fill the crust with the prepared apple mixture, mounding slightly in the center.

Step 10

Roll out the second disk of dough and place it over the apple filling. Trim and crimp the edges to seal the pie. Cut small slits in the top crust for ventilation.

Step 11

Brush the top crust with a beaten egg for a golden finish. Sprinkle with 2 tablespoons of coarse sugar if desired.

Step 12

Place the pie on a baking sheet to catch any drips and bake in the preheated oven for 45-50 minutes, or until the crust is golden brown and the filling is bubbling.

Step 13

Allow the pie to cool for at least 2 hours before slicing and serving to allow the filling to set.
