Ingredients

  • 225 grams sharp cheddar cheese
  • 60 grams unsalted butter
  • 120 grams all-purpose flour
  • 0.5 teaspoons salt
  • 0.5 teaspoons paprika
  • 0.25 teaspoons garlic powder
  • 2 tablespoons cold water

Directions

Step 1

Grate the sharp cheddar cheese finely and let it come to room temperature.

Step 2

In a food processor, combine the grated cheddar cheese, unsalted butter, all-purpose flour, salt, paprika, and garlic powder. Pulse until the mixture resembles coarse crumbs.

Step 3

Add 1 tablespoon of cold water and pulse again. If the dough hasn’t come together yet, add another tablespoon of cold water and pulse until the dough forms a ball.

Step 4

Turn the dough out onto a sheet of plastic wrap. Gently form it into a flat disc, wrap it tightly, and refrigerate for at least 30 minutes.

Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.

On a lightly floured surface, roll out the chilled dough to about 1/8-inch (3 mm) thickness. Use a small cookie cutter or knife to cut out crackers in your desired shapes.

Transfer the cut crackers to the prepared baking sheet, leaving a little space between each one.

Use a fork or toothpick to poke holes in the center of each cracker to prevent puffing during baking.
