Ingredients

  • 1 cup Yellow cornmeal
  • 1 cup All-purpose flour
  • 1 tablespoon Baking powder
  • 0.5 teaspoon Baking soda
  • 0.5 teaspoon Salt
  • 2 tablespoons Granulated sugar
  • 1 cup Buttermilk
  • 4 tablespoons Unsalted butter, melted and cooled
  • 1 Egg, large
  • 1 cup Sharp cheddar cheese, shredded
  • 2 tablespoons Fresh chives, finely chopped (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or lightly grease it with non-stick cooking spray.

Step 2

In a large mixing bowl, whisk together the cornmeal, all-purpose flour, baking powder, baking soda, salt, and sugar until well combined.

Step 3

In another bowl, whisk together the buttermilk, melted butter, and egg until smooth and fully incorporated.

Step 4

Pour the wet ingredients into the dry ingredients and stir gently with a spatula until just combined. Avoid overmixing as it can result in dense muffins.

Step 5

Fold in the shredded cheddar cheese and chopped chives (if using) until evenly distributed throughout the batter.

Step 6

Divide the batter evenly among the muffin cups, filling each about 3/4 full.

Step 7

Bake in the preheated oven for 15-18 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.

Step 8

Remove the muffins from the oven and let them cool in the pan for 5 minutes before transferring them to a wire rack to cool completely or serve warm.
