Ingredients

  • 2 cups all-purpose flour
  • 0.5 cup unsalted butter (cold, cubed)
  • 0.5 teaspoon salt
  • 0.25 cup water (cold)
  • 1.5 cups sharp cheddar cheese (shredded)
  • 1 piece fresh green chili (finely chopped)
  • 0.5 teaspoon smoked paprika
  • 1 piece egg (beaten, for egg wash)

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour and salt.

Step 2

Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, blend until the mixture resembles coarse crumbs.

Step 3

Gradually add cold water, 1 tablespoon at a time, mixing gently until the dough comes together. Be careful not to overwork the dough.

Step 4

Flatten the dough into a disc, wrap in plastic wrap, and refrigerate for 20 minutes to chill.

Step 5

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 6

In a medium bowl, combine the cheddar cheese, chopped fresh green chili, and smoked paprika. Mix until evenly distributed.

Step 7

On a lightly floured surface, roll out the chilled dough to about 1/8-inch thickness.

Step 8

Using a 3-inch round cookie cutter (or similar), cut out circles from the rolled dough.

Step 9

Place about 1 tablespoon of the cheese and chili mixture in the center of each circle.

Step 10

Fold the dough over the filling to create a half-moon shape, and press the edges together firmly to seal. You can use a fork to crimp the edges for an extra decorative and secure seal.

Step 11

Arrange the pillows on the prepared baking sheet and lightly brush the tops with the beaten egg.

Step 12

Bake in the preheated oven for 12-15 minutes, or until golden brown and puffy.

Step 13

Allow to cool slightly before serving. Enjoy warm or at room temperature!
